
For forty years, number three was Redbrook's newsagent. Papers, sweets in jars, a bell on the door that could wake the street. When it closed in 2021 the windows went grey and the whole hill felt it.
We took the keys that winter and spent three months arguing with the building. The counter stayed where the counter had always been. The bell stayed. So did the paper rack, and the day's editions still sit by the door for anyone to read over a flat white.
Coffee comes from Pilot Works across town, roasted in small batches and driven over every week. Pastry is ours: two ovens and a kitchen small enough that everything on the menu has to earn its place.
That is the whole story. No founding myth, no mission statement.
